Ho, Ho, Ho!  It’s Day #4 of The 12 Cakes of Christmas and we’re having a jolly good time sharing festive cakes from some of our favorite cake shops.  Today’s design is a merry little cake from Amanda Oakleaf.  This charming little guy is making his list and checking it twice.  Straight from the North Pole, it’s not Santa Baby but…. Santa Penguin has arrived!

This is, by far, my favorite time of year.  The excitement, the buzz, the joy of the holiday season!  I’ve been wanting to do this segment for several years now and am thrilled to see it finally come to life.  I asked some of my very favorite bakeries and cake shops to send over their best cakes of the season.  Well, ask and you shall receive!!  I feel like a kid on Christmas morning each time I open my inbox to find a new, beautiful cake!  Honestly, it has been quite a challenge to narrow it down to just 12.  But that’s how the song goes, right?  There might not be a partridge in this pear tree… but there will be 12 days of festive holiday cake inspiration that will definitely leave you merry!  It’s 12 bakers baking…. it’s The 12 Cakes of Christmas! Hot Chocolate Cupcakes

Happy December! It’s beginning to look at lot like Christmas at my house. The tree is up and decorated, Christmas songs are playing all day and my holiday baking “to do” list is about a mile long. To kick off the baking I thought it would be fun to combine my favorite seasonal drink, hot chocolate, with the always popular peppermint candy to create a festive cupcake. I am thrilled with how delicious and adorable these Hot Chocolate Cupcakes with Peppermint Buttercream turned out and hope you enjoy them as much as we did.

These cupcakes are your basic chocolate recipe with the addition of a prepared cup of Hot Chocolate mixed in. The magic happens when you add the peppermint buttercream on top. The combination of chocolate and peppermint is absolutely perfect together, not to mention it gives you some fresh breath!

To add some extra cuteness on top, garnish with homemade peppermint bark, which is a staple sweet in my house each Christmas. The bark is super easy to make and you will have plenty left over after topping the cupcakes! So you can certainly package up the bark and give away as gifts. If you don’t want to hassle with the extra step of making the bark, you can easily buy some already made at the store.

Peppermint Hot Chocolate Cupcakes

You should definitely add these cupcakes to your holiday baking list! Your friends are sure to go crazy if you show up to a party with a batch of these! I guarantee I will be making them several more times before the month of December is over!

Peppermint Hot Chocolate Cupcakes Recipe

Hot chocolate Cupcakes with Peppermint Buttercream
(makes 20 cupcakes)

For the cake:
2 1/2 cups all-purpose flour
2 cups granulated sugar
1 cup cocoa powder
2 tsp baking powder
1 tsp baking soda
1 tsp salt
3 eggs
1 packet Hot Chocolate mixed with 3/4 cup warm milk
3/4 cup vegetable oil
1 tsp vanilla extract

  1. Preheat oven to 350 degrees and line muffin pans with cupcake liners.
  2. In bowl of stand mixer combine dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda and salt.
  3. Add wet ingredients to dry ingredients: eggs, hot chocolate/milk mixture, vegetable oil and vanilla.
  4. Beat on medium speed until well combined, scraping down sides of bowl as needed.
  5. Fill cupcake liners 2/3 full with batter.
  6. Bake for 16 minutes or until toothpick inserted in center comes out clean.
  7. Let cupcakes cool in pans for 5 minutes, then remove to wire racks to finish cooling.
  8. Once cupcakes are completely cool frost with Peppermint Buttercream and garnish with Peppermint Bark.

For the icing:
3 sticks unsalted butter, softened
6 cups confectioner’s sugar
1/4 – 1/2 cup milk
1 1/2 tsp peppermint extract

  1. In bowl of stand mixer beat butter until creamy.
  2. Gradually add in confectioner’s sugar one cup at a time, scraping down sides of bowl as necessary.
  3. Add milk until you reach desired consistency.
  4. Add peppermint extract and mix well.
  5. Place icing in piping bag fitted with a large round tip and frost cupcakes.
  6. Garnish cupcakes with Peppermint Bark and white nonpareils (optional).

Peppermint Bark:
12 oz Chocolate Bark
12 oz Vanilla Bark
20 mini candy canes, crushed
1/2 tsp peppermint extract

  1. Line a baking sheet with wax paper.
  2. Melt chocolate bark in microwave safe bowl for 1 minute. Continue to microwave at 15 second intervals until melted. Pour melted chocolate onto prepared baking sheet and spread evently with a spatula. Let chocolate harden for about 30 minutes.
  3. Melt vanilla bark in microwave safe bowl for 1 minute. Continue to microwave at 15 second intervals until melted.
  4. Add peppermint extract to melted vanilla and stir. Pour melted vanilla overtop of hardened chocolate and spread evenly with a spatula.
  5. Sprinkle crushed candy canes ontop of candy bark.
  6. Allow bark to harden for about 30 minutes before breaking into pieces. Garnish cupcakes.

DIY: Modern Christmas Cookies

Callye of The Sweet Adventures of Sugarbelle is stopping by to share some of her cookie magic…

For some reason, many people don’t think they are capable of decorating perfect sugar cookies.  This is simply untrue.  With a little practice and experience ANYONE can create beautiful cookies.  Today I’m going to share a fun little tip to help you along on your cookie decorating journey.  I used it to make my latest set of Christmas cookies.
Chevron & Christmas Tree Cookies

I call this the impression trick.  Before baking, I used a cookie cutter to lightly stamp the dough.  This leaves an impression on the cookie that will serve as a piping guide after baking .

When the cookies have cooled, use piping icing and a #2 or #3 tip to outline the tree design, and after a minute of two of drying, fill with matching flood icing.

While the tree is still wet, drop colored dragees or pearl “ornaments” into the icing.  Let the Tree area dry for about an hour, than outline and fill the rest of the cookie.

Let them dry overnight, and you’ll have beautiful perfect cookies.
Modern Christmas Tree Cookies

Sometimes I’ll use a #1.5 tip to outline the tree or add a few more ornaments the next day.  I like to create collections of simple coordinating cookies with lots of texture and visual interest.  This makes even the simplest of cookie designs appear amazing.

This technique works for MANY different cookie themes. Don’t be afraid to experiment.

DIY: Cupcake Liner Christmas Trees

We officially kicked off the holiday season on Monday with our annual Crate and Barrel Giveaway!  And what better way to continue the fun than a new Christmas Cupcake Liner Craft?  If you’re a regular reader, you know we love a good cupcake liner craft!  And why not?  They’re adorable, easy and make great use of the extra cupcake liners we all have lying around.

A few weeks ago, I found my inner Santa and came up with a fun new tutorial for you. In a few simple steps, you’ll be able to ‘spruce’ up any cupcake.  So break out your tape, extra baking liners and let’s get started!   Perfect for Christmas goodies and easy enough for the kids to craft… hope you enjoy my Cupcake Liner Christmas Trees!

Cupcake Liner Christmas Trees

Tools:
Cupcake Liners
Double Sided Tape
Extra Long Toothpicks (or mini skewers)

Instructions:

  1. Grab a regular sized cupcake liner.  Fold liner in half.  Fold in half again, creating a pie-like wedge.  Tape the two flaps together using double sided tape, so that you have one solid triangle.
  2. Fold in half again.  Tape again.  Now you should have a tall skinny wedge that is 1/8 the size of your original circle.  If your liner is now a flat triangle due to folding, fluff it up with your finger so that it makes a cone.
  3. Insert your toothpick through the center of your cone.  Slide it down about half way.  This is the bottom tier of your tree.
  4. Repeat folding steps 1 – 2 with another cupcake liner.  Mixing in another pattern or color adds to the fun!  Slide this onto your toothpick creating the middle tier.
  5. Repeat folding steps 1-2 with a third and final cupcake liner.  Place this last liner on the top of your toothpick to complete your tree.  Smush, crinkle and/or adjust layers until you’re satisfied with your tree.  Insert into cupcake and enjoy!

TIP:  To complete the look, bake your cupcake in a pannetone baking cup {purchased at Bake It Pretty} and dust icing with powdered sugar before topping with a Christmas tree.

Sadie Had a Little Lamb

You may remember back in September when things got kind of quiet on the blog… and I mentioned my daughter’s 1st birthday was coming up.  Our sweet little Sadie turned one, right in the middle of our move to Florida.  I debated for months whether or not we could swing a birthday party amidst all of the chaos.  But a child only has one 1st birthday!  And that is definitely something to celebrate!

Sadie absolutely loves everything soft, furry and fluffy. So I decided to embrace this and build a theme around her very favorite stuffed animal.  Her little lamb.  The colors were whites, creams, light caramel and chocolate brown with lots of fluffy, furry, wooly textures.  That meant anything and everything lamb related like wool, yarn, felt and fleece with a touch of burlap thrown in. I wanted it to look and feel cuddly soft with lots of different textures for her to touch.  Just like her little lamb.  Together with good friends, we celebrated this special day with a modern update of an old classic…. Sadie Had a Little Lamb!

I designed the little lamb invitation to look polished but playful.  The lamb’s swirly coat was actually inspired by a wool rug from Crate and Barrel.  The back of the invite featured a repeating ‘wool locks’ pattern with the text “Sadie Had a Little Lamb”.

I went a bit over the top with the party décor, crafting in every spare moment during the months prior.  Oodles of yarn was used in the making of this party!   Yarn balls decorated everything from the dessert table to the present table.   Small yarn pom poms hung from the ceiling in both the food area and the living room while larger yarn pom ‘flowers’ rested in little white vases.  Sadie’s presents were wrapped with furry fleece ribbon and tied with a yarn pom. Yarn wrapped letters spelling ‘Sadie’ marked the present table. And yes, a little bit of yarn even wrapped the cakes. Yarn, yarn, everywhere!

The little lamb theme took over the dessert table.  All of the sweets were in the neutral color scheme and appropriate for a Fall.  Paper cones adorned with little lamb tags and displayed with a white picket fence were filled with white cheddar popcorn.  Fluffy white cotton candy was served up in mini martini glasses as were cinnamon pinwheel cookies (an old Sellman family recipe).  Of course, I designed the cakes.  One for the centerpiece of the table and a small little smash cake for the birthday girl.  Additional desserts included caramel apples, powdered sugar and cinnamon donut holes and caramel apple cake shooters (recipe HERE).

We enjoyed food hot off the grill, courtesy of my husband.  He felt like such a dad that day!  We had tables and chairs set up outside so the kids could run (or crawl) and play.   While the kiddos enjoyed their sugar high, the grown ups enjoyed some adult beverages.  Even the wine bottles got into the Little Lamb spirit, all dressed up in their matching wool sweater ‘sleeves’.

Adorable custom sugar cookies with puffy sheep and mix-n-match patterns were created by Sandy at Firefly Confections.    These cute little guys were gone quick!  They were SO good!

The birthday girl had her very own smash cake to dig into.  Talk about my favorite cake moment ever!  My sweet little Sadie having her first taste of cake… her hands and face were covered in icing but she loved it!  Sara at Bugaboo Bliss made the most adorable custom bib and matching headband using all of the fabrics and colors from the party.  By the end, it was covered in cake too!

Even though I’m a sweets girl, my favorite part of the dessert table was the little lamb canvas backdrop. Diana of djDecor created this lamb painting for the party and I absolutely fell in love with it!   I was so sad to take it down after the party that I decided to change Sadie’s bedroom to a little lamb theme.

By far the cutest felt detail had to be the sheep pillows that Sadie’s grandmother made, which matched the sheep décor so perfectly.  Thanks for helping, Grammy!  Garland made from small felt circles hung from the ceilings and also wrapped Sadie’s high chair.

With the help of a patient husband, Sadie’s grandmother, several talented friends and lots of coffee… somehow we managed to pull this off!  And I have to say that it’s my favorite party ever.  Not because of the decorations, or the theme, or the cake.  But because it celebrated the first year of my sweet Sadie’s life.  She is such a blessing and I could not be more grateful to have her in my life.  I only hope that she will tolerate having a crazy cake lady for a mother!

Thank you, thank you to the lovely ladies who helped me bring this party to life!  It was such a special day for our family.  I hope all of you like Sadie’s Little Lamb 1st Birthday Party as much as we did!
