Yes, you read the title right. Carved Ganache. Honestly, the thought of carving ganache has never even crossed my mind. And I did a double take when I first saw this cake in my inbox. But that is the wonderful thing about this blog… talented, creative bakers across the globe keep us all inspired and wanting to do more! And Trina Thomson of Sweet Ruby Cakes in Australia is pushing the chocolate cake boundaries with her latest creation. Inspired by antique wall molding, this cake is romantic, ornate and all about chocolate! From the base icing to the intricate bottom molding and antiqued topper, it’s all chocolate ganache! Created using no molds, just cold chocolate ganache and a hot knife… let’s marvel at this Hand Carved Chocolate Ganache Cake!
Trina of Sweet Ruby Cakes shares the inspiration behind her design:
“I found an image of some intricate wall moulding in a furniture magazine and thought it would make a wonderful trim for a cake. I couldn’t find suitable moulds and started thinking up ways to make one.. clay? silicone rubber? and then I wondered… “Could ganache be carved?” Why yes, it can!
I coated the cake with very soft dark ganache and piped a rough pattern. I then set the cake in the fridge and when it was hard I carved into it with a hot knife. I then antiqued it with some edible gold. Its such a lovely technique and nothing I have seen before. The possibilities are endless and I hope to explore a little further with white and tinted ganaches. The best part? No fondant.”
Incredible right?! I think it takes a moment to fully appreciate this concept… for the mind to process that this cake is not only covered in ganache but the intricate bottom molding and topper are made of ganache. Hand carved ganache! Such a fabulous idea! And the end result is as delicious as it is striking.
