Golden Honeycomb Cake

You know it’s going to be a good week when Monday starts off with a pretty new cake to love.  Especially one as gorgeous as today’s feature. With a soft color palette of ivory, peach and gold, today’s cake will certainly charm you with its natural beauty.  And then you’ll spot the honeycomb pattern and all will be lost.  Oh how we love a pretty take on honeycomb.  Let alone a textured honeycomb pattern with delicate accents of gold and a subtle shimmer.  And then there’s the sugar roses, blooming in a vine-like cluster, adding a natural touch of peach.  It all comes together in a design that’s organic yet elegant and 100% beautiful.  Let’s take a look at today’s featured design, created by Tânia Sérgio, cake designer and co-owner of T Bakes in Portugal.

Tânia of T Bakes gives us the scoop on her design:

“This design presented a few challenges since I was to create a classically structured cake with an organic look featuring peach roses, but it should not be overtly feminine.

With that in mind, I chose to use ivory instead of white, bringing the design into a warmer color pallet.  I used a honeycomb texture to help bring structure to the design but edged it in gold.  Using this technique allowed me to achieve a more organic feel since it gives the illusion of breaking up the otherwise rigid pattern.  With the sugar roses, I wanted to keep it as natural as possible so I went with the idea of a wild rosebush growing on the side of the cake, ending in delicate rose buds.  Roses are among my favorite sugar flowers to make so I had a lot of fun creating this cake!”
