I have a not-so-secret fascination with the concept of food as trend.  Who decides that lemons are hot one year and peaches the next?  It seems that pineapples are everywhere right now, and I’m loving it (albeit quite bemused by it).

I’m sort of a foodie, and a big fan of Top Chef.  I love when the chefs create dishes featuring one food in three different ways (e.g. carrots that are candied, pickled, and shaved), and since the design for this cake was a food item, I wanted to incorporate three different techniques.

The top and bottom tier are covered in a fondant pineapple texture we made from a mold using real pineapple and food-grade silicone.  The center tier features hand cut and appliqued gumpaste cutouts.  Lastly, we used wafer paper leaves around the top edge of the bottom tier.  Pineapple three ways!
