Tessa Lindow Huff perceives pastry as edible art and has been quite the artist since a very young age. She began studying ballet and performance art at age four, and continued dancing into her early twenties. Huff has always been involved in music and theatre, and has a great appreciation for art in all of its forms. After receiving her Bachelor of Arts degree in Communication from the University of California, Davis, she decided to turn her passion of the culinary arts into a career.

After gaining key experience in her college kitchen and at a local bakery, Huff decided to pursue her dream of creating her very own cake studio. With training from Elisa Strauss of Confetti Cakes and courses at the French Pasty School in Chicago, Huff utilized her newly refined skills to set the tone for her couture desserts. Established in 2008, The Frosted Cake Shop was a custom cake boutique specializing in made-to-order desserts. Using quality ingredients and seasonal flavors, Huff and The Frosted Cake Shop serviced an array of loyal clients, weddings, and community events. Beyond cake, Huff helped style events and created custom dessert tables and displays to showcase individual pastries, homemade candies, and more. Since everything was custom made, Huff was even able to cater to special dietary needs and an assortment of requests from her clients.

Since making the decision to close TFCS to move out of California, Huff has been busy exploring all aspects of food, photography, and design. She continues to value quality ingredients and challenges herself to use a variety of fresh flavors and textures to create unique sweet and savory pairings. In addition to pastry, Huff is known for her realistic sugar flowers, figures, and sculpted cake toppers. Beyond cakes, Huff loves to style events and create custom dessert tables to showcase individual pastries, homemade candies, and more. She enjoys entertaining and believes that the beauty of a dessert not only lies in the design, but in the display as well. You can her find her most recent work on her blog, Style Sweet CA.

Huff recently moved to Vancouver, BC with her husband and Frenchie, Remy. She is currently expanding her recipe box, polishing her photography skills, a blogging about her new culinary and crafting adventures. Peanut Butter & Jelly Cake | peanut butter cake with brown sugar peanut butter frosting, strawberry jam and chopped peanuts | by Tessa Huff for TheCakeBlog.com Peanut Butter and Jelly CakeSlowly but surely, summer is coming to a close. While some of us are soaking in the last bits of vacation, it’s back-to-school time for the rest. Time to pack away the sandy swimsuits , campfire-scented tents, and sun-soaked picnic blankets. But if you must drag yourself to school when you wish you could be playing in the warmth of the lingering summer sun, at least there is cake. Peanut Butter and Jelly Cake, to be exact.

Mint Cookies 'N Cream Cake with crushed cookies in the cake and frosting plus a chocolate drip | by Tessa Huff for TheCakeBlog.com Mint Cookies ‘n Cream CakeOur contributor, Tessa Huff, is sharing a new cake recipe today... Cookies ’n Cream anything is pretty hard to resist. From ice cream to cheesecake, it is definitely one of my weaknesses. Not only do I look forward to the hidden bites of cookie chunks, there is just something so childlike and playful about a dessert laced with cookies. Nothing is more playful than a layer cake, so why not stuff one with cookies too?! Add in a simple twist, like mint, and top it with gorgeous, drippy chocolate glaze, and you just can’t help but smile!

Strawberry Thyme Cake | by Tessa Huff for TheCakeBlog.com Strawberry Thyme CakeOur contributor, Tessa Huff, is sharing a new cake recipe today... It’s finally here! Berry season, that is. Not only did my local Farmer’s Market open up for summer this past weekend, but I was able to walk away with a flat of the juiciest, reddest local strawberries. Just by looking at them, you could tell they were full of flavor. Albeit small, these little gems are like nature’s candy. And just like that, a whole flurry of recipe opportunities and berry-tastic dessert potentials came flooding in.

With the holidays creeping up on us sooner and sooner each year, it can be difficult to know just when to start making and snacking on our favorite treats. Sometimes I feel like I wait all year just to indulge in daily sugar cookies a little more guilt free. But when the weather gets chilly and the days are shorter, it definitely calls for a hot mug of something creamy and a treat to warm the soul. It is just about that time, at least in my neck of the woods. So grab a snuggle buddy, your coziest sweater, and meet up by the fire for some sips and sweet eats.

Banana Chocolate Hazelnut Cake | Recipe by Tessa Huff for TheCakeBlog.com Banana Choco Hazelnut CakeOur contributor, Tessa Huff, is sharing a delightfully decadent cake recipe today... It's the peak of summer, and I am sure we are all starting to feel the heat. You are most likely reaching for all your favorite frozen treats every afternoon. One of my favorites is a frozen chocolate-dipped banana. Yumm! I've been seeing recipes for bite-sized varieties pop up on several of the desserts blogs lately, so I was inspired to make you all a cake version. So this cake might not actually be frozen or super cool and refreshing, but it is extremely flavorful. And fairly sinful. So if you can't beat the heat, then you might as well indulge. If you are courageous enough to brave turning on the oven, then you deserve a slice of this rich and extremely moist cake.

Gold Ruffle Heart Cake | by Tessa Huff of Style Sweet CA Ruffled Heart CakeRuffles on cakes is a trend that has been completely loved and embraced over the past couple years. From small, delicate frills to larger waves, ruffles have been popping up on wedding, birthday, and baby shower cakes alike. For this design, I wanted to use the ruffle but not in the typical horizontal fashion. I started to play around with some ideas, and discovered that vertical ruffles are just as stunning. Highlights of gold accent the delicate details, and the plain yet chic piping on the other tiers do not draw too much attention away from the main focus.

Poached Pear & Cranberry Cake | by Tessa Huff | TheCakeBlog.com Poached Pear & Cranberry CakeI have a love-hate relationship with pears. When they are ripe, they are the most beautiful, juicy, and flavorful treats. Any other time, they fall completely flat. For this recipes, I decided to put our differences aside, and give some TLC to some pears. When it comes to the dessert menu, I hardly ever understood why anyone would ever chose a poached pear or cheese plate over decadent cheesecake or gooey chocolate cake. While I still don't know why cheese finds its place among these sweet treats, I think I finally understand the beauty of a poached pear. Taking the time to basically make a sweet, cinnamon-y jacuzzi for your pears definitely pays off. Poaching pears definitely alleviates some of that heartache when they are not perfectly ripe. The pears become sweet, tender, and can be infused with whatever flavor you'd like. Plus, it will leave your kitchen smelling absolutely amazing!

I will even admit to finishing off the Halloween stash before the trick-or-treaters pick out their costumes. However, with my perpetual diet and life-long quest to eat a little healthier and a bit less-processed, it's always a constant battle: to have or not to have Candy Corn in the house. I am sure many of you can relate.

Apple Spice Cake Recipe | by Tessa Huff | TheCakeBlog.com Recipe: Apple Spice CakeI don't know about everyone else, but from where I write and bake, the seasons are already subtly changing. Even though I do not have to return to school or anything, I can sense a shift in energy around the city. Soon it will be darker earlier, the tourists absent from the city center, and I'll need a scarf at the beach. However, as sad as it always is to see another beautiful summer come to a close, I do love fall flavors and autumn baking the absolute most out of any season. It is safe to say that it is fairly commonplace for recipes and menus to follow whatever produce and local goods are in season. It might not be boot weather quite yet, but that will not stop us from stockpiling recipes with apples, pumpkin, cinnamon, and even gingerbread now. To add to this list of baked goods to be make this season, try this Apple Spice Cake with Dulce De Leche Frosting.
