Tessa Huff: Contributor

Tessa Huff

Tessa Lindow Huff perceives pastry as edible art and has been quite the artist since a very young age. She began studying ballet and performance art at age four, and continued dancing into her early twenties. Huff has always been involved in music and theatre, and has a great appreciation for art in all of its forms. After receiving her Bachelor of Arts degree in Communication from the University of California, Davis, she decided to turn her passion of the culinary arts into a career.

After gaining key experience in her college kitchen and at a local bakery, Huff decided to pursue her dream of creating her very own cake studio. With training from Elisa Strauss of Confetti Cakes and courses at the French Pasty School in Chicago, Huff utilized her newly refined skills to set the tone for her couture desserts. Established in 2008, The Frosted Cake Shop was a custom cake boutique specializing in made-to-order desserts. Using quality ingredients and seasonal flavors, Huff and The Frosted Cake Shop serviced an array of loyal clients, weddings, and community events. Beyond cake, Huff helped style events and created custom dessert tables and displays to showcase individual pastries, homemade candies, and more. Since everything was custom made, Huff was even able to cater to special dietary needs and an assortment of requests from her clients.

Since making the decision to close TFCS to move out of California, Huff has been busy exploring all aspects of food, photography, and design. She continues to value quality ingredients and challenges herself to use a variety of fresh flavors and textures to create unique sweet and savory pairings. In addition to pastry, Huff is known for her realistic sugar flowers, figures, and sculpted cake toppers. Beyond cakes, Huff loves to style events and create custom dessert tables to showcase individual pastries, homemade candies, and more. She enjoys entertaining and believes that the beauty of a dessert not only lies in the design, but in the display as well. You can her find her most recent work on her blog, Style Sweet CA.

Huff recently moved to Vancouver, BC with her husband and Frenchie, Remy. She is currently expanding her recipe box, polishing her photography skills, a blogging about her new culinary and crafting adventures. In her spare time, she enjoys traveling, yoga, decorating and entertaining in her new city apartment, and running on the seawall.

Instead, a pinch of spice and dash of molasses create great depth of flavor and help balance out the cloyingness of straight maple syrup. The vanilla bean seeds add a touch of warmth in both the cake and frosting to round out all of the flavors.

Ruffled Heart CakeRuffles on cakes is a trend that has been completely loved and embraced over the past couple years. From small, delicate frills to larger waves, ruffles have been popping up on wedding, birthday, and baby shower cakes alike. For this design, I wanted to use the ruffle but not in the typical horizontal fashion. I started to play around with some ideas, and discovered that vertical ruffles are just as stunning. Poached Pear & Cranberry CakeI have a love-hate relationship with pears. When they are ripe, they are the most beautiful, juicy, and flavorful treats. Any other time, they fall completely flat. For this recipes, I decided to put our differences aside, and give some TLC to some pears. When it comes to the dessert menu, I hardly ever understood why anyone would ever chose a poached pear or cheese plate over decadent cheesecake or gooey chocolate cake. While I still don't know why cheese finds its place among these sweet treats, I think I finally understand the beauty of a poached pear. Taking the time to basically make a sweet, cinnamon-y jacuzzi for your pears definitely pays off. Poaching pears definitely alleviates some of that heartache when they are not perfectly ripe. The pears become sweet, tender, and can be infused with whatever flavor you'd like. Plus, it will leave your kitchen smelling absolutely amazing!
